Three ways to build the wall, and what each buys
Full-cavity open cell fills the bay and air seals it. Flash-and-batt puts closed cell against the sheathing for air and vapour control and completes the cavity with batt. Exterior continuous insulation sits outside the studs and is the only approach that interrupts thermal bridging. On a conversion the choice usually follows the cavity depth, since a shallow seasonal wall may not have the space to reach a sensible number any other way than with more resistance per inch.
What the label does not tell you
A batt marked R-14 gives that through the batt and much less through the studs beside it, because wood conducts heat far more readily than insulation does. Framing is roughly a fifth of a wall. In a lightly built older structure with air leakage on top, the assembly performs well below what the number implies, and the gap is widest exactly in the buildings people assume are fine.
Where the money goes if the wall stays shut
Foam bonds to the substrate, so the cavity must be open before anything can be sprayed. A finished wall cannot be done. If nothing is opening, the attic, the rim joist and the crawl space are reachable now, generally leak more, and cost less to correct, and on an older lake property the crawl space is frequently the worst of the three.
